Since this was our first brick-and-mortar location, we hold 363 Fore St. near and dear to our hearts. Enjoy a quick, high-qualty, casual lunch amidst a sea of fine dining restaurants… or get rowdy with us at Cheese Louise After Dark every Friday and Saturday night.

GENERAL MANAGER

Sophia’s Cheese journey began in March of 2024, and since then she has problem-solved her way up the management ladder to the role of General Manager. She attributes her relative success to consuming one cup of tomato parmesan soup a day. In her rare moments away from Cheese Louise, you can find Sophia wherever there’s live music happening.

Favorite Sandwich: The Godmother, add chicken.

ASSISTANT GENERAL MANAGER

Dean moved to Maine from Ohio in 2023 with his husband, two cats, and their yellow lab. He joined Cheese Louise in April 2024 alongside current General Manager Sophia, and the two went from training together to managing the Portland shop—their co-leadership was basically fate. Outside of work, Dean enjoys collecting Pokémon cards and cozy gaming.

Favorite Sandwich: The What’s Poppin’, add chicken.
